                            Cauliflower Fritters

    1      Box           frozen cauliflower -- (10 oz.)
      1/2  C.            milk
      1/2  C.            flour
    1      Tbsp.         oil
                         salt and pepper to taste
    1                    egg -- beaten
    1      Tsp.          baking powder
      1/3  C.            raisins (optional)
    3      Tbsp.         oil (for frying fritters -- add as needed) (3
                         to 4)
 
 Cook cauliflower according to package directions.
 Combine milk, flour, egg and oil together, add salt, pepper and
 baking powder. Set aside. Drain cauliflower and mash with a
 fork. Stir cauliflower and raisins into batter.
 In frying pan heat 3 tablespoons oil over medium heat,
 when oil is hot spoon batter into oil (potato pancake size).
 Fry until golden brown 3 to 4 minutes on each side. Serve with
 a pat of butter. Blot on paper towel before serving. Makes
 about 8 fritters.
