 PANCAKES
 
 1 cup flour (I use whole-wheat pastry flour)
 1/2 cup each nonfat yogurt and skim milk (proportions approximate)
 1 teaspoon baking powder
 1 teaspoon baking soda
 1 teaspoon salt (optional; I don't use it)
 1 tablespoon sugar (optional)
 2 egg whites, stiffly beaten
 
 Combine the dry ingredients; mix in the yogurt and milk, then gently
 fold in the beaten egg whites.  Cook on a hot non-stick griddle or
 one sprayed with shortening spray.
