                             Eggplant Casserole

    1      Medium        to large eggplant -- cubed
    2      Lb.           ground beef
    1      Medium        onion -- chopped
    1                    green peppers -- chopped (1 to 2)
    1      Large Can     tomatoes -- drained and chopped
    2      Tbsp.         oregano
                         salt and pepper to taste
    1      C.            sharp Cheddar cheese -- grated
 
 Place cubed eggplant in saucepan with 4 cups water,
 bring to a boil. Reduce heat and simmer for 5 minutes. Brown
 ground beef until cooked and drain. Saute onion and green
 pepper until tender. Drain eggplant and place in large casse- 
 role dish. Add ground beef, onion, green pepper, tomatoes,
 oregano, salt and pepper. Bake in microwave for 10 minutes on
 80% power ((30 to 45 minutes in conventional oven). Remove
 from oven and top with grated cheese. Place in oven for 2 to 3
 minutes until cheese is melted. Serves 6.
