                            Creamy Ham Casserole

    3      cups          broccoli florets
    4      tablespoons   butter or margarine
      1/3  cup           flour
    1      cup           milk
    4      ounces        cheddar cheese -- diced
      1/2  cup           sour cream
    3      cups          ham cubes
    4      ounces        canned mushrooms
                         rice -- cooked
 
 Steam broccoli until tender (don't overcook) and rinse with cold
 water.  Melt butter in a large saucepan and stir in the flour until
 smooth.  Add the milk slowly, stirring constantly.  Cook and stir
 until mixture thickens.  Add the cheese and sour cream and continue
 cooking until cheese is melting, stirring constantly.  Add ham,
 mushrooms, and broccoli.  Place in casserole pan and heat in oven
 until hot and bubbly.  Serve over hot cooked rice.

 NOTES : Prepare up to the point of baking, then freeze.  To serve,
 thaw completely and then bake as directed.
