       Title: Cocktail Sandwich Wreath

       Yield: 40 Servings
  
       3 c  Cubed cooked chicken
     1/2 c  Chopped celery
     1/2 c  Chopped red apple
     2/3 c  Mayonnaise or salad dressing
       4 t  Lemon juice
     1/2 t  Salt
            Dash of white peper
            Margarine or butter -
            Softened
      40    Slices rye or pumpernickel
            Cocktail bread
            Leaf lettuce
  
   In food processor bowl with metal blade, process
   chicken, celery, apple, mayonnaise, lemon juice, salt
   and pepper until small pieces of chicken, celery and
   apple remain.* Spread margarine on 1 side of each
   slice of bread.  Spread 2 heaping teaspoons chicken
   mixture on each slice. Top with small piece of
   lettuce. Arrange open-faced sandwiches, slightly
   overlapping, on large platter to form wreath
   shape.**Garnish as desired. 40-Open-faced sandwiches.
   
   TIPS* If desired, chicken, celery and apple can be
   finely chopped with knife.  In medium bowl, mix
   chopped ingredients with mayonnaise, lemon juice, salt
   and pepper until well blended.
   
   **Wreath can be prepared several hours before serving.
   Wrap tightly with plastic wrap and refrigerate until
