                               Parmesan Bites

    1      package       cream cheese -- softened (8 oz.)
    1 1/4  cups          grated parmesan cheese -- divided (5 oz.)
    2      cans          refigerated cresent dinner rolls -- (8 oz. each)
    1      cup           chopped red bell pepper
      1/4  cup           chopped fresh parsley
 
 Mix cream cheese and 1 cup parmesan cheese with electric mixer on medium
 speed until well blended.Seperate cresent rolls into 8 rectangles; seal
 perforations.  Spread 3 tbsp cream cheese mixture on each rectangle; top
 with red pepper and parsley.  Fold long end up over filling to center;
 fold up again to enclose remaining filling.  Cut each into equal size
 squares.  Place, seam-side down, on cookie sheet.  Sprinkle with remaining
 parmesan cheese.Bake at 350F for 13 to 15 minutes or until golden
 brown.  Makes 32 bites.
 Variation: Substitute pepperoni and oregano for red bell peppers and
 fresh parsley.
