       1 lb button mushrooms
     1/3 c  olive oil
       3 t  red wine vinegar
     1/4 c  scallions
       1 t  garlic
       1 t  dijon mustard
       1 t  salt
     1/4 t  black pepper
       3 t  parsley
 
 pack mushrooms into a sterile jar
 stir together remaining ingredients-mix well
 pour over mushrooms
 screw on lid to seal
 chill for several hours, inverting jar frequently
