                   HOMEMADE HORSERADISH AND CREAMY SAUCE

    1      cup           Horseradish root; peel -- cube
      3/4  cup           Vinegar
    2      teaspoons     Sugar
      1/4  teaspoon      Salt
                         CREAMY HORSERADISH SAUCE
    1      cup           Heavy cream
    1      cup           Mayo
      1/8  teaspoon      Salt
      1/4  cup           Horseradish
 
 HORSERADISH-Combine all ingredients in a processor or blender; process until
pureed. Carefully remove cover, keeping face away from container. Cover and store
in the fridge. Use as a condiment.
 
   SAUCE-In a mixing bowl, whip cream until soft peaks form. Add mayo and salt;
 blend thoroughly. Fold in horseradish. Chill until ready to serve. Use as a
 condiment with meats.
