                           Molasses Rice Pudding

    4                    egg whites -- beaten
    1 1/2  cups          skim milk
    1 1/4  cups          brown rice, cooked -- cooked
    1      cup           raisins
      1/4  cup           molasses
    1      teaspoon      salt
    1      teaspoon      vanilla
      1/4  teaspoon      cinnamon
      1/2  teaspoon      nutmeg
 
      Preheat oven to 350 degrees.
 	  In a medium bowl, add milk and egg whites and mix well. Add all the
     other ingredients, mix well. Place in a medium baking dish. Cover and bake
     for 1 hour or until the mixture is firm. Serve warm or chilled, topped with
     whipped cream if desired .
 (note:	This recipe will probably work better if you add uncooked rice and
increased the milk somewhat.  Keep that in mind..)
