                               Summer Pudding

    1      pt            strawberries
    1                    lemon
    1      pt            raspberries
    1      pt            blueberries
      2/3  C             sugar
      1/8  tsp           nutmeg
    9      slices        firm white bread
 
  Halve strawberries. Pare yellow zest from lemon, leaving white pith
 behind. In frying pan, combine berries, sugar, nutmeg, lemon zest and
 1/3C water. Cook over medium heat til fruit is soft but still intact,
 8-10min. Take from heat, let cool and remove lemon zest. Drain fruit,
 reserving juice. Line 5cup bowl w/ plastic wrap. Trim crusts from bread.
 Dip one side of each bread slice in juice and line bottom
 and sides of prepared bowl, moistened side toward bowl. Cut bread as
 needed
 to fit. Pour in fruit. Top w/ remaining bread, trimming to fit. Brush
 remaining juice over bread. Cover w/ plastic wrap and put a plate on top
 that
 fits into bowl. Add a weight, such as a 28oz can and refrigerate
 overnight.
 Turn pudding out onto a plate, cut in wedges and serve w/ whipped cream
 if
 desired.
