                             Persimmon Pudding

   Amount  Measure       Ingredient -- Preparation Method

    1      cup           persimmon pulp
    1      teaspoon      butter
    1      cup           sugar
    2      tablespoon    soda
      1/2  cup           milk
    1      cup           flour
    1      tablespoon    vanilla
    1 1/2  tablespoon    baking powder
    1                    egg
      1/2  teaspoon      each: cloves -- allspice, ginger,
                         cinnamon.
    1      pinch         salt.
                         SAUCE:
    2                    eggs beaten
                         with
    1      C.            sugar.
                         add 1 C. sherry to eggs.
                         just before serving add 1/2 pt.
                         whipped cream.
 
 Mix all together and steam 3 hours.  Serve with whipped cream or sauce.
 
 I like to use a greased coffee can; tie waxed paper, loosely over the top 
 (it will rise as it steams) and place it in my dutch oven with the grate in 
 place, on top of stove.  Just keep an eye on it and keep the water level at 
 about 1/3 depth of can.  This is delicious!!!
