                                Corn Pudding

    1      Can           corn or 2 1/2 c. fresh -- (2 lb.)
    2      Tbsp.         butter
    2      Tbsp.         flour
    1      C.            liquid -- milk creamed corn
                         liquid
    1                    chopped pimento (3 Tbsp.)
      1/4                green pepper
    2                    eggs -- separated
      3/4  Tsp.          salt
      1/4  Tsp.          paprika
      1/4  C.            crumbled bacon
 
 Preheat oven to 350 degrees. Drain 2 pound kernel corn or 2
 1/2 cups fresh. Melt 2 tablespoons butter. Stir in until
 blended 2 tablespoons flour. Combine and stir slowly 1/3 cups
 corn liquid and enough chopped pimento 1/4 green pepper, when
 this mixture reaches boiling reduce heat. Beat 2 egg yolks
 well. Pour part of corn mixture over egg yolks. Beat and
 return to corn mixture. Stir and cook several minutes to
 permit yolk to thicken. Add 3/4 teaspoon salt, 1/4 teaspoon
 paprika. Beat two egg whites until stiff. Fold in corn
 mixture. Fold in 1/4 cup cut up bacon, fried crisp. Bake as
 for souffle 30 minutes at 350 degrees.
