                             Peach Tomato Salsa

   Amount  Measure       Ingredient -- Preparation Method

    2      cups          diced ripe tomatoes
      1/2  cup           diced yellow bell pepper
    1      cup           diced peeled ripe peaches
    3      tablespoons   seeded and minced jalapeno pepper; see

      1/4  cup           diced white onions
    3      tablespoons   minced cilantro
    1      teaspoon      salt
    3      tablespoons   balsamic vinegar
 
 Mix all ingredients together and refrigerate, covered, for an hour.  Allow
 to come back to room temperature before serving.
 
 N: Use caution in handling fresh chilies, taking care not to touch eyes or
 face and washing hands thoroughly when through.
