    2      Cups          fresh plum tomatoes, cored -- chopped
    1      Cup           red onion -- minced
      3/4  Cup           fresh cilantro -- chopped
    2      Teaspoons     jalapeno chili -- minced
    2      Tablespoons   fresh lime juice
                         Salt -- to taste
                         Ground black pepper -- to taste
 
 Combine tomatoes, onion, cilantro, and jalapeno. Add lime juice and mix
 thoroughly. Season with salt and pepper. Set aside until ready to use.
