     1/3 c  unsalted butter
       2 c  onion
       2 t  garlic
       1 c  carrot
       2    dried red chile
       2 c  apple
       2 c  beef consomme
       1 t  kosher salt
       2 t  curry powder
       1 t  fresh ginger root
     1/2 c  coconut milk
 
 melt butter in a large skillet, over a medium flame 
 add onions, carrots, garlic, chiles, and apples 
 heat and stir for 5 minutes 
 cover, reduce heat, and simmer for 15 minutes
 stir in consomme
 cover and simmer for 45 minutes 
 stir in curry powder to taste 
 stir in salt, ginger, and coconut milk 
 heat to a boil, remove from heat
 serve hot or warm
