                             TAHINI-MISO SAUCE

    1       tb           Oil
    3       tb           Whole wheat pastry flour
      1/4   c            Tahini
    1 1/4   c             -- water or vegetable
                         stock
    2       tb           Miso
 
    Heat the oil in a small saucepan. Add the flour and
   cook, stirring constantly, until the flour is lightly
   browned and begins to give off a nutty aroma.
   
    Remove the pan from the heat and stir in the tahini.
    Add a small amount of water and stir vigorously to
   form a paste.
   
    Return th epan to the heat and slowly add the
   remaining water. Stirring continuously, cook the sauce
   until the desired consistency is reached. If the sauce
   is too thick, add a little water.
   
    Remove from the saucepan from the heat and add the
   miso. Stir well.
   
    Variation:
   
    Saute 1/2 cup of finely chopped onion in the oil
   before adding the flour. Mix well and proceed as
   indicated above.
