       3 t  flour
       2 t  butter
 -------------------------finely chopped,
 unsalted--------------------------
       1 c  beef stock
     1/4 t  sugar
     1/4 t  kosher salt
     1/4 t  freshly ground white pepper
 
 heat butter in a large skillet, over a medium flame 
 whisk in flour until bubbly 
 add cashews, heat and stir until mixture is a rich golden color 
 gradually whisk in beef broth 
 stir in sugar 
 bring to a boil, reduce heat, and simmer for 4-5 minutes 
 skim well 
 season to taste with salt and pepper
 serve hot, warm, slightly chilled, or at room temperature
