       4    chipotle chile
     1/4 c  sliced bacon
     1/4 c  onion
       3 c  tomato concasse
       1 c  beef stock
     1/4 c  carrot
     1/4 c  celery
     1/4 c  cilantro
     1/2 t  kosher salt
     1/4 t  pepper
 
 cover chiles with warm water 
 allow to stand for 60 minutes, drain, and finely mince
 saute bacon and onions in medium saucepan, over a medium flame, until
 bacon is crisp 
 add chiles and remaining ingredients-mix well
 serve hot, warm, or at room temperature
