                 Mushroom Sauce For Spaghetti (Portabella)

    1      pound         Mushrooms* -- sliced
    4      ounces        Olive oil
    1      cup           Dry vermouth
    2      tablespoons   Garlic--minced
    8                    Plum tomatoes -- peeled & seed
    2                    Shallots -- sliced
                         Fresh basil -- chopped
                         Fresh parsley -- chopped
                         Fresh black pepper
 
 *Best to use a combination of mushrooms, oyster, shiitake, and portobella
 
 In a saut‚ pan heat half the oil and saut‚ mushrooms until wilted. Add the vermou
 th and reduce the liquid by half Set aside. In a saucepan heat the remaining oi
 l till almost smoking. Toss in the tomatoes; garlic and shallots and braise und
 er high heat for 4-5 minutes. Add the mushrooms, reduced liquid and remaining i
 ngredients. This sauce could very well use cheese with the pasta. Will Decker N
