                               CARAMEL SAUCE

    3      cups          brown sugar -- loosely packed
    3      tablespoons   flour (or 3 tsp powdered arrowroot)
      1/2  cup           butter -- melted
    1 1/2  cups          boiling water
    2      teaspoons     vanilla extract
      1/2  cup           chopped nuts -- optional
 
 Mix brown sugar and flour (or arrowroot) together in the top of a double
 boiler. (Arrowroot will make a less “pasty” sauce. If you use arrowroot,
 however, don't let the sauce boil or it will not thicken properly.) Add
 melted butter and stir well. Over gently boiling water, cook stirring
 occasionally for five minutes. Slowly add boiling water to the sugar mixture
 while continuing to stir constantly. Continue to cook and stir until sauce
 is thickened. Remove from heat and stir in vanilla extract. 
 
 Serve immediately or cool and store in refrigerator up to about 3 months.
