                                POTATO CAKE

    1      cup           Margarine -- softened
    2      cups          Sugar
    2                    Eggs
    1      cup           Mashed potatoes -- cold
    1      teaspoon      Vanilla extract
    2      cups          Flour
      1/4  cup           Cocoa
    1      teaspoon      Baking soda
    1      cup           Milk
    1      cup           Nuts -- chopped

   cream butter and sugar until fluffy. add eggs one at a time beating well. Blend
 in potatoes and vanilla. Mix flour cocoa and baking soda and alternately add
 with milk blending well . Stir in nuts. Pour into a greased 13 x 9 x 2 inch
 baking pan. Bake at 350 for 40-45 minutes or until cake tests done. Cool on a
 wire rack.
 Frost with your favorite icing
