* Exported from MasterCook * Sugarless Applesauce Cake Recipe By : Taste of Home Premiere Edition Serving Size : 12 Preparation Time :0:00 Categories : Cakes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup raisins 1 cup diced dried fruit 2 cups water 2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon ground nutmeg 1 1/2 teaspoons ground cinnamon 2 eggs -- beaten 1 cup unsweetened applesauce 2 tablespoons liquid sweetner 3/4 cup vegetable oil 1 teaspoon vanilla extract 1/2 cup chopped nuts Combine raisins, fruit and water in a saucepan; cook, uncovered, until water is evaporated and fruit is soft; set aside to cool; meanwhile, in a large mixing bowl combine flour, baking soda, salt, nutmeg and cinnamon; in another bowl, combine eggs, applesauce, sweetener, oil and vanilla; add nuts and reserved fruit mixture; stir into dry ingredients, stirring to mix thoroughly; pour into a greased 10-inch fluted tube pan and bake at 350~F for35 - 40 minutes, or until cake tests done. - - - - - - - - - - - - - - - - - - Plain Text Version of This Recipe for Printing or Saving | |
