                             Apple Harvest Cake

    1 1/4  Cups          all-purpose flour
    1      Cup           whole wheat flour
    1      Cup           granulated sugar
      3/4  Cup           packed brown sugar
    1      Tablespoon    ground cinnamon
    2      Teaspoons     baking powder
    1      Teaspoon      salt
      1/2  Teaspoon      baking soda
      3/4  Cup           cooking oil
    1      Teaspoon      vanilla
    3                    eggs
    2      Cups          finely chopped -- peeled
                         apples (2 medium)
    1      Cup           chopped walnuts
                         powdered sugar glaze
                          -- (recipe below)
                         or whipped cream
 
 Generously grease and flour a 10- inch fluted tube pan; set aside. In a
 large mixing bowl combine the flours, granulated and brown sugars,
 cinnamon, baking powder, salt, and baking soda. Add oil, vanilla, and
 the eggs; beat till well mixed. Stir in chopped apples and walnuts.
 Spoon batter evenly into prepared pan. Bake in a 350 oven for 45 to 50
 minutes or till cake tests done. Cool in pan 15 minutes; invert cake
 onto a wire rack. Cool thoroughly. Driz- zle top with Powdered Sugar
 Glaze or dollop servings with sweetened whipped cream. Makes 16
 servings. Powdered Sugar glaze: In a small mixing bowl stir together 1/2
 cup sifted powered sugar, 1/4 teaspoon vanilla, and enough milk (1 to 2
 tea- spoons) to make of drizzling consis- tency. Drizzle over cooled
 cake.
