       Title: Apple Walnut Cake with Lemon Butter Frosting

       Yield: 16 Servings
  
       4 c  Apples; peeled, chopped
       2 c  Sugar
       2    Eggs; slightly beaten
     1/2 c  Oil
       1 ts Vanilla
       2 c  Flour
       2 ts Baking soda
       2 ts Cinnamon
       1 ts Salt
       1 c  Walnuts; chopped
            ***lemon butter frosting***
       4 tb Butter
       3 c  Confectioner’s sugar
       2 tb Lemon juice
       2 tb Water
  
   Recipe by: Sue Klapper Preparation Time: 1:00 In bowl stir together apples
   and sugar; let stand 5 minutes.
    Stir together eggs, oil and vanilla.  Sift flour, baking soda, cinnamon
   and salt.  Blend in egg mixture. Fold in apples and walnuts, mixing well.
   Pour batter into greased and floured 13 x 9 baking pan. Bake at 350 for 60
   minutes or until done. Cool and frost with Lemon Butter Frosting. Frosting:
   In bowl combine butter, sugar, lemon juice and enough water for spreading
