---------- Recipe via Meal-Master (tm) v8.05 Title: MAPLE APPLE SPICE CAKE Categories: Fruits, Cakes, Holiday Yield: 1 Servings -----------------------------BORDEN'S PAMPHLET----------------------------- 1 1/2 c Flour 1 ts Baking powder 1 ts Ground cinnamon 3/4 c Butter, softened 2/3 c Firmly packed light brown -sugar 2 Eggs 3/4 c Pure maple syrup 1 1/2 ts Vanilla extract 2 sm All purpose apples, pared -and finely chopped (about 1 1/2 Cups) 3/4 c Chopped nuts ---------------------------CREAM CHEESE FROSTING--------------------------- 3 oz Cream cheese; softened 1 tb Milk 1 ts Vanilla 2 1/2 c Powdered sugar Preheat oven to 350 degrees. Stir together flour, baking powder and cinnamon; set aside. In large mixer bowl, beat margarine and sugar until fluffy. Add eggs, syrup and vanilla; mix well. Add flour mixture; mix well. Stir in apples and nuts. Pour into well-greased and floured 9 inch square baking pan. Bake 40-45 minutes or until wooden pick inserted near center comes out clean. Cool. Spread with Cream Cheese Frosting. Store covered in refrigerator. Cream Cheese Frosting: In small mixer bowl, beat cream cheese, milk, and vanilla until smooth. Gradually beat in powdered sugar until smooth and of spreading consistency. Makes about 1 1/4 cups. Debbie’s notes: I made this for a Halloween party but doubled it and baked it in two 9x12″ baking pans and cut the cooking time down by about 5 to 10 minutes or until lightly browned on top and tests done. It’s a great cake and sweet.
