---------- Recipe via Meal-Master (tm) v8.05 Title: FRESH APPLE NUT CAKE Categories: Cakes, Fruits Yield: 12 Servings ------------------------MARTHA WHITE'S SOUTHERN SAMP------------------------ 2 Eggs 1 c Vegetable oil 1 3/4 c Sugar 2 1/2 c Martha White Self-Rising -Flour 3 c Peeled chopped apples 1 c Chopped pecans 1 ts Cinnamon 1 ts Vanilla Cream Cheese Icing, below Preheat oven to 300. Grease a 13x9x2-inch baking pan. Beat eggs in mixing bowl. Add oil and sugar; beat well. Add remaining ingredients, except Icing; blend thoroughly. Pour batter into prepared pan. Bake for 1 hour and 10 minutes or until cake begins to pull away from sides of pan. Cool in pan on wire rack. Spread with Cream Cheese Icing. NOTE: If using Martha White All-Purpose Flour, sift 1 teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon baking soda with flour. CREAM CHEESE ICING ~~~~~~~~~~~~~~~~~~ 2 packages (3 ounces each) cream cheese, softened 1/4 cup (1/2 stick) butter or margarine, softened 4 cups sifted confectioners' sugar (about 1 pound) 2 teaspoons vanilla Beat cream cheese and butter together until light and fluffy.
