* Exported from MasterCook * Cranberry Cake Recipe By : Lansing State Journal, 4-29-69 Serving Size : 1 Preparation Time :0:00 Categories : Cakes Cranberries Desserts Nuts Using Cake/Brownie Mixes Bobbie Not Sent Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package yellow cake mix 2 eggs 2/3 cup cranberry juice cocktail grated rind of 1 small orange 3 tablespoons cranberry-orange relish 1/4 cup finely chopped nuts red food coloring Combine cake mix, eggs, cranberry juice and orange rind; beat until smooth, following beating directions on package. Remove 1/3 of batter and add relish and nuts. Add enough food coloring to make batter a deep red. Spoon light and dark batters alternately into greased and floured 9x5x3″ loaf pan. Bake in moderate oven 350 F. for 65-70 minutes, or until cake tests done. Let stand in pan 5 minutes, then turn out on rack and let stand until cool. To decoreate, frost top and sides of cake with your favorite frosting. Makes one 9x5x3″ loaf.
