* Exported from MasterCook II * Black Bottom Cupcakes Recipe By : Our Favorite Recipes Serving Size : 1 Preparation Time :0:00 Categories : Cupcakes And Muffins Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 8 oz pkg cream cheese -- softened 1/3 cup sugar 1 egg beaten 1/8 teaspoon salt 1 6 oz pkg semisweet chocolate morsels 1 1/2 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 1 cup sugar 1/4 cup cocoa 1 cup water 1/3 cup vegetable oil 1 teaspoon vinegar 1 teaspoon vanilla Combine cream cheese, 1/3 cup sugar, egg and 1/8 teaspoon salt in a medium bowl, beat well with a wire whisk. Stir in chocolate morsels and set aside. Sift together flour, soda, 1/2 teaspoon salt, 1 cup sugar, and cocoa. Combine water, oil, vinegar and vanilla, add to flour mixture. Beat at low speed until well blended. Spoon batter in paper lined miniature muffin pans filling 1/2 full. Spoon 1 teaspoon reserved sour cream cheese mixture into center of each cupcake. Bake at 350° got 25 to 30 minutes. Let cool in pans 10 minutes. Remove from pans and let cool completely on wire rack. 2 1/2 dozen.
