* Exported from MasterCook Mac * Rhubarb Cake Recipe By : Mom D Serving Size : 1 Preparation Time :1:00 Categories : Cakes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/4 cups light brown sugar -- packed 1/2 cup shortening 1 egg 1 cup buttermilk 1 teaspoon baking soda 2 cups flour -- sifted 1 1/2 cups rhubarb -- diced 1 teaspoon vanilla 1 teaspoon cinnamon Cream 1 1/2 cups sugar with the shortening. Mix the buttermilk with the baking soda and add it with the egg to the sugar mixture. Add flour alternately wiht rhubarb, then add the vanilla and pour into a greased and floured 2 quart baking dish. Sprinkle with remaining sugar mixed with the cinnamon. Bake at 350 degrees for 40 to 45 minutes.
