                      Blintzes with Fresh Peach Sauce

    1      cup           lowfat creamed cottage cheese
    1      package       Neufchatel cheese -- 3-oz
      1/2  teaspoon      vanilla extract
                         vegetable oil
    4                    flour tortilla -- (8-inch)
    1                    fresh California peach -- sliced
      1/2  cup           water
    2      tablespoons   sugar
    2      teaspoons     lemon juice
    3                    fresh California peach -- thinly sliced
 
 1.  Cream cheeses with vanilla extract until well blended.
 2.  Heat lightly oiled 10-inch skillet.  Briefly heat a tortilla, turning
 once, over medium heat just until soft.  
 3.  Portion 1/4 cheese mixture in center.  Top with 1/4 peach slices.  Fold in
 two sides, partially covering filling. Roll up to enclose filling and make
 rectangular package.  Repeat with remaining filling and tortillas.  
 4.  Add small amount of oil as needed to skillet.  Heat filled tortillas over
 medium-low heat until brown on all sides.  Serve with warm Fresh Peach Sauce.
 FRESH PEACH SAUCE:  Combine water, sugar and lemon juice in saucepan.  Bring
 to boil.  Boil uncovered 5 minutes.  Remove from heat.  Stir in peaches.
