                               LA FONDA FLAN

    2      cups          sugar
    9                    eggs
    6      cups          evaporated milk
    2      tablespoons   vanilla
      1/2  teaspoon      nutmeg
      1/2  teaspoon      cinnamon
    1      tablespoon    sugar
 
 Measure sugar into a deep pan. Place over heat and stir constantly with a woode
 n spoon. Melt sugar until caramelized and golden brown. Remove from heat and po
 ur into individual bowls, or a large pan, just so it coats the inside.
 
 While sugar is being prepared, beat eggs with milk, vanilla, nutmeg, cinnamon, 
 and sugar. Pour carefully into sugar coated containers. Place flan in a large f
 lat pan with an inch of water. Bake in a 350 degrees oven for 1 hour and 10 min
 utes. When cooled, turn over onto a plate. Before serving, add fresh whipping c
 ream for garnish if desired. 
 
 Yields: 18 - 1/2 cup servings.
