                         California Oranges Jubilee

    1      Qt.           vanilla ice cream
    1      Can           flaked -- (3 1/2 oz.)
                         coconut
    6                    seedless oranges
                         orange juice
      3/4  C.            sugar
    3                    whole cloves
    1      C.            water
    1 1/2  Tbsp.         cornstarch
    3      Tbsp.         brandy
 
 Using a 2-ounce ice cream scoop, scoop ice cream into 8
 balls. Roll in coconut and freeze until ready to serve. Cut
 peel from oranges, removing all white membrane. Separate
 oranges into segments, over a bowl, reserving juice. Place
 segments in a second bowl. Add enough orange juice to reserved
 juice to make 1 cup. Combine sugar, cloves, orange juice and
 3/4 cup of the water in a 10-inch skillet. Bring to boiling.
 Lower heat to medium-low; simmer 15 minutes. Discard cloves.
 Blend cornstarch with remaining 1/4 cup water in small cup
 until smooth. Stir into hot orange juice mixture. Cook,
 stirring, until mixture comes to boiling, about 10 minutes.
 Lower heat; boil gently for 30 seconds. Add orange segments;
 heat through. Carefully add brandy. Heat 30 seconds. Remove
 ice cream “snowballs” from freezer. Place in heatproof dessert
 bowls. Spoon hot sauce over.
