                           Chilled Lemon Souffle

    5                    eggs -- separated
    1 1/4  cups          sugar
    1      tablespoon    lemon rind -- grated
      2/3  cup           lemon juice
    2      envelopes     gelatin -- unflavored
      1/2  cup           water
    2      cups          whipping cream
           dash          cream of tartar -- or more
    2      cups          berries as garnish -- fresh
 
 Beat together egg yolks and sugar. Add lemon rind to yolks and gradually add ju
 ice, beating constantly.
 
 Soften gelatin in water and heat until it dissolves. Allow to cool slightly. Wh
 ip cream lightly and stir into the lemon mixture. Add gelatin and continue stir
 ring until mixture begins to thicken.
 
 In a separate bowl, beat egg whites with cream of tartar until stiff but not dr
 y. Fold into lemon mixture. Spoon into a souffle dish (2 quart capacity) Chill 
 several hours or until completely set.
 
 To serve, spoon souffle onto chilled serving dishes and top with berries.

 NOTES : Egg whites, when whipped can be increased in volume eight times. Cream 
 of tartar added to whites adds no volume, but the acid helps prevent lumpiness 
 and collapse from over coagulation or overbeating.
