                              Rhubarb Crumble

    6      cups          rhubarb -- sliced 1/2 thick
      1/4  cup           honey
                         Vegetable cooking spray
      1/3  cup           regular oats
      1/3  cup           flour
      1/4  cup           packed brown sugar
    3      tablespoons   Butter - Lactantia Light -- cut into small
    piece
 
 Combine rhubarb and honey together in a bowl, toss to coat.  Spray 8
 pan with vegetable spray and add rhubarb. In food processor put oats,
 flour and brown sugar.  Pulse a couple of times to mix.  Add butter
 and process until it resembles coarse meal.  Sprinkle mixture over
 rhubarb. Bake at 375 for 40 minutes or until rhubarb is tender.

 NOTES : I did not find it quite sweet enough.  Add more honey or a
 little sugar to the rhubarb.
