       Title: MAPLE CREAMS

       1 c  Maple sugar
       1 c  Light brown sugar
     1/2 c  Water
     1/2 ts Almond extract
            Walnut meats
     Cook the sugars and water to 240 F, or to the soft-ball stage; add the
   almond extract. Cool to lukewarm, then beat until creamy, yet firm.
    Knead until smooth, form into small balls, and press a walnut meat into
   each ball.
