                              Poulet en Croute

   Amount  Measure       Ingredient -- Preparation Method

      1/2  lb            mushrooms -- sliced
    1      stick         butter
    3      tablespoons   brandy
    4                    chicken breast, boned, skinned -- & pounded
    4      ounces        alouette or seasoned cheese
    8      sheets        phyllo dough
                         ***Sauce***
    2      tablespoons   butter
    2      tablespoons   flour
      1/2  cup           Brandy
    2      cups          chicken broth
    1      tablespoon    chives or parsley
 
 Melt 2 T butter in sauce pan.  saute mushrooms til brown.  Add Brandy. 
 
 Flambe with match.  Spread 1 oz of chees in each chicken breast and coole
 d 
 
 mushrooms.  Roll up the breast and place seam side down.  Pat each with 
 
 butter.  Set aside.
 Melt 1/4 cup of butter.  Using 2 sheets of phyllo for each, place chicken
  
 
 on phyllo brushed with butter 2-3 from the end of dough and roll dough 
 
 folding in sides.  Brush with butter.  Place chicken on greased cookie 
 
 sheet.  Bake 350* 40-45 minutes.
 
 Sauce- Melt butter, add flour stir til slightly browned, remove from heat
 =2E 
 
  Slowly add brandy.  Slowly add broth.  Return to stove and heat til 
 
 thickened.  Add parsley and chives, season to taste.

 NOTES : Ok, So it’s not low fat - for a ladies luncheon it was superb!
