                            Steamed Red Snapper

    1 1/2  Lb.           red snapper fillets
    1      Medium        onion -- sliced in rings
                         approximately 1 Tbsp. butter or margarine
                         approximately 1/2 c. tomato sauce or
                         ketchup
                         sweet basil leaves
                         black pepper
 
 Rinse fish and drain on paper towel. In large skillet,
 saute onion in butter until just translucent. Lay fish fillets
 on top of onion rings. Top each fillet with tomato sauce.
 Sprinkle sweet basil and pepper to taste. Cover and simmer 10
 to 15 minutes, until fish flakes. Serve with steamed new
 potatoes and vegetables. Serves 4.
