                            Red Snapper Veracruz

    3      Lb.           red snapper or other whitefish
      1/2  Tsp.          black pepper
    2      Lb.           fresh or canned
                         tomatoes -- chopped*
    1      Medium        onion -- finely sliced
    2                    bay leaves
   16                    pitted green olives -- sliced
    1      Tsp.          salt
    3      Tbsp.         lemon or lime juice
    2      Tbsp.         olive oil
    2      Tbsp.         Mazola oil
    2      Large Cloves  garlic -- minced
      1/4  Tsp.          oregano
    2                    jalapeno chiles -- chopped
    1      Tsp.          monosodium glutamate
 
 Arrange slices of fish in a large oiled casserole or
 baking dish. Mix all the other ingredients together in a
 saucepan. Simmer together for about 5 minutes. Pour over the
 fish. Bake at 350 degrees for 15 to 20 minutes.
 Note: Stewed tomatoes are a good substitute.
