Combine tomatoes, red pepper, scallions, coriander and 2 tsp lime juice, lim e zest, cumin, chili powder salt and red pepper flakes. 2. Stir in black beans and set aside. 3. Warm tortillas one at a time in a hot skillet. 4. Top with shredded lettuce, spoon on tomato mixture and sprinkle with peanuts .
