                            White Hot Chocolate

   Amount  Measure       Ingredient -- Preparation Method

    3      cups          half and half
      2/3  cup           white chocolate chips
    1      3 inches sti  cinnamon
      1/8  teaspoon      ground nutmeg
    1      teaspoon      vanilla extract
      1/4  teaspoon      almond extract
                         Ground cinnamon -- optional
 
 1.  Combine 1/4 cup of the half-and-half or light cream, vanilla
 chips, stick cinnamon, and nutmeg in a medium saucepan.  Whisk over
 low heat till vanilla chips are melted.  Remove stick cinnamon.
 
 2.  Add the remaining half-and-half or cream.  Whisk till heated
 through.  Remove from heat.  Stir in vanilla and almond extract.
 
 3.  Serve warm in mugs.  Sprinkle with cinnamon, if desired.
 
 Can use light cream instead of half-and-half, if desired.

 NOTES : Prefer a lower-fat version?  Substitute 2-percent milk or
 evaporated skim milk for the half-and-half or light cream.
