                            Florida Citrus Sauce

    4      ounces        sugar
   16      ounces        water
    2 1/2  tablespoons   arrowroot
    3      ounces        orange juice
    2      ounces        lemon juice
    1      ounce         grapefruit juice
    1      ounce         lime juice
    1      teaspoon      orange -- lemon, grapefruit,
                         -- lime
                         zests -- blanched
    1      ounce         butter
 
 Combine sugar, water and arrowroot in saucepan; heat until thickened.  Remove
 from heat; stir in remaining ingredients.  Let cool.
