MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Dr. Digit's Southern Coleslaw for Bbq Categories: Dr. digit, Bbq, Vegetables, Side dish, Relishes Yield: 8 Servings 4 c Cabbage, finely chopped 3 tb Sugar 1/3 c Heinz catsup 2 tb White vinegar 1 ts Salt 1/4 ts Black pepper, or more Dash cayenne This is a different slaw from the usual mayonnaise version and is pretty close to the BBQ slaw you would find around Lexington, NC. By itself it is not so complex, but on a hot dog, on tomato slices, or as an accompaniment to BBQ, it can't be beat. The original recipe had 1/4 cup of sugar -- we cut it down a bit, but not too much. That's what balances the spicy BBQ. Use a food processor if you wish. Chop slaw. Mix rest of ingredients and whisk or blend until dissolved. Add to cabbage, mix well. Cover and refrigerate until cold. MMMMM
