       Title: Chocolate Tofu Cake

            Vegetable cooking spray
       8 oz Firm tofu
     1/4 c  Part skim ricotta cheese
     1/4 c  Light cream cheese
     1/4 c  Pure maple sugar
       3 tb Cocoa powder
       2 lg Egg whites
       2 tb Ground cinnamon
       3 tb Irish creame liqueur
       1 tb Kahlua coffee liqueur
            Topping:
     1/2 c  Nonfat sour cream or yogurt
       1 ts Vanilla extract
       1 tb Honey
  
   Preheat oven to 350.  Coat 10 in glass pie plate with 3
   sprays of vegetable spray. Combien tofu, cheese, cream
   cheese, maple syrup, cocoa, egg whites, cinnimon and
   liquers.  Puree until smooth and pour into prepared pie
   plate.  Place in center rack of oven. On bottom rack place
   baking pan filled halfway with water. Bake 1 hour.
   
   Combine topping ingredients in small bowl and whisk
   throughly. When cake has baked an hour remove from oven and
   spread topping on evenly. Decorate by drizzline a one to
   one mixture of maple syrup and unsweetened cocoa on top of
   topping. Return cake to oven and bake until topping sets
   10-30 minutes. Refrigerate 2 hours before serving. 92
