                           Chocolate Pudding Cake

    1      cup           all-purpose flour
      3/4  cup           sugar
    2      tablespoons   unsweetened cocoa
    1 1/2  teaspoons     baking powder
      1/4  teaspoon      salt
      1/2  cup           1% low-fat milk
    2      tablespoons   vegetable oil
    2      teaspoons     vanilla
    1      cup           brown sugar -- firmly packed
      1/4  cup           unsweetened cocoa
    1 3/4  cups          boiling water
 
 Combine first 5 ingredients in a 9-inch square baking pan. Add milk, oil
 and vanilla, stir until smooth, Combine brown sugar and 1/4 cup cocoa
 and sprinkle over batter. Pour boiling water over batter (DO NOT STIR)
 Bake 350 degree oven for about 40 minutes. or cake springs back when
 touched in the center. Serve warm
