                           Chocolate Cherry Cake

   18 1/2  ozs           devil’s food cake mix
    1      tsp           baking powder
    1      tbsp          olive oil
    1      tsp           almond extract
   21      ozs           cherry pie filling
    2                    egg whites -- whipped
                         ----Topping----
    1      c             granulated sugar
    5      tbsps         margarine
      1/3  c             skim milk -- at room temperature
    1      c             semisweet chocolate chips -- melted
 
 Preheat oven to 350.  Prepare 9 x 13 pan with cooking spray and flour; set
 aside.  To prepare batter, combine cake mix and baking powder in a mixing
 bowl.  In another mixing bowl, combine oil, almond extract, cherry pie
 filling, and egg whites. Mix dry ingredients with dry ingredients just
 until moistened.   Pour into prepared pan.  Bake for 25 to 30 minutes.  Let
 cool and cut into squares before adding topping.  To prepare topping,
 combine sugar, margarine and milk in saucepan.  Bring to a boil, stirring
 constantly, and boil 1 minute.  Remove from heat and add chocolate chips.
 Stir until melted.  Pour over cake and spread.
