       Title: Red Velvet Cake # 1

       Yield: 6 servings
  
       1 c  Butter
   2 1/2 c  Flour
   1 1/2 c  Sugar
       2    Eggs
       1 oz Red food coloring
       1 ts Water
       2 ts Cocoa
       1 ts Salt; scant
       1 ts Baking soda
       1 ts Vanilla
       1 c  Buttermilk
       1 ts Vinegar
  
   Cream butter and sugar, add eggs and beat well; add food
   coloring and water.  Sift flour, salt, soda and cocoa
   together and add to creamed mixture with buttermilk and
   vanilla.  Add vinegar (fold in lightly). Grease and flour 2
   9-inch cake pans.  Bake at 350F for about 30 minutes.
   Here’s a good frosting for this cake: CREAM CHEESE FROSTING
   8 oz cream cheese, at room temperature 1/2 stick (1/4 cup)
   butter, softened 2 c confectioneres' sugar, sifted if lumpy
   1 tsp vanilla extract Combine the cream cheese, butter,
   confectioners' sugar and vanilla in a mixing bowl.  Beat
   well, or process until perfectly smooth and spreadable.
   You will have enough to fill and frost cake.
