       Title: Cocoa Espresso Pudding Cake

       Yield: 1 servings
       1 c  All-purpose flour
       1 c  Sugar (divided)
     1/4 c  Plus 2 tablespoons unsweeten
            -ed cocoa
       2 tb Instant coffee
       2 ts Baking powder
     1/4 ts Salt
     1/2 c  Milk
       3 tb Melted butter
       1 ts Vanilla extract
       1 c  Boiling water
      Preheat oven to 350. Combine flour, 2/3 cup sugar, 1/4
   cup cocoa, coffee, baking powder and salt. Mix together
   milk, butter & vanilla. Add to dry ingredients. Stir well.
   Spray 8 inch baking pan with nonstick cooking spray. Pour
   batter into pan. Mix together remaining 1/3 cup sugar & 2
   tablespoons cocoa. Sprinkle over batter. Pour 1 cup boiling
   water over batter. Do not stir. Bake 30 minutes. Serve warm.
